2 cups poha (medium or thick variety)
1 medium onion, finely chopped
1 small tomato, chopped
1 medium potato, diced
1 small carrot, grated
1/4 cup green peas (fresh or frozen)
1/4 cup capsicum, chopped
2 green chilies, finely chopped (optional)
2 tbsp peanuts
2 tbsp oil
1/2 tsp mustard seeds
8-10 curry leaves
1/4 tsp turmeric powder
1/2 tsp salt (or to taste)
1/2 lemon
2 tbsp coriander leaves, chopped

Prep the Poha: Rinse the poha in a colander under running water. Let it sit for 2-3 minutes to soften. Sprinkle a pinch of salt and turmeric powder over the poha and gently mix.
Sauté the Veggies: Heat oil in a pan. Add mustard seeds and let them splutter.
Toss in curry leaves, peanuts, and green chilies. Sauté for a minute until the peanuts turn golden.Add onions and sauté until translucent. Stir in the diced potatoes and cook for 3-4 minutes. Add carrots, capsicum, and peas, cooking until the veggies are tender.
Combine and Cook: Gently add the softened poha to the pan. Mix well with the veggies, ensuring it’s evenly coated with spices. Cover and cook on low heat for 2-3 minutes, allowing the flavors to blend.
Garnish and Serve: Turn off the heat and drizzle lemon juice over the poha. Garnish with chopped coriander leaves. Serve hot with a side of curd or enjoy it as is!
