1 cup semolina (rava)
1 cup curd (yogurt)

1/4 tsp turmeric powder
1 small onion, finely chopped
1 small tomato, finely chopped
1 small green chili, finely chopped (optional)
2 tbsp coriander leaves, finely chopped
1 tsp grated ginger

Prepare the batter: Rinse the poha thoroughly and drain excess water. Let it sit for 5 minutes to soften. Blend the softened poha with curd to form a smooth paste.
In a mixing bowl, combine the poha-curd paste, semolina, salt, turmeric powder, and water. Mix well to make a thick, lump-free batter. Let it rest for 15 minutes.
Prep the toppings: In a bowl, mix chopped onions, tomatoes, green chili, coriander leaves, and grated ginger. Set aside.
Cook the Uttapam: Heat a non-stick pan or tawa and grease lightly with oil.
